  • 1 pound ground turkey or chicken
  • 4 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup chicken broth
  • 2 cups heavy cream
  • 2 cups baby spinach
  • Fresh basil leaves (for garnish)
  • Salt and pepper to taste

Instructions

  1. Cook penne pasta in salted boiling water until al dente; reserve some pasta water before draining.
  2. In a large skillet, heat olive oil over medium-high heat. Brown the ground turkey or chicken, breaking it up as it cooks (about 5-7 minutes). Remove from skillet.
  3. Lower heat to medium; sauté minced garlic until fragrant (about 1 minute). Stir in sun-dried tomatoes, chicken broth, Italian seasoning, and red pepper flakes.
  4. Add heavy cream to the skillet and simmer for 3-5 minutes until thickened.
  5. Stir in grated Parmesan, cooked sausage, and baby spinach until the spinach wilts.
  6. Combine with drained penne pasta; add reserved pasta water as needed for desired sauce consistency.
  7. Serve hot, garnished with torn basil leaves.
