  • 3 tablespoons butter
  • 1/2 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 cup pumpkin puree
  • 1 1/2 cups heavy whipping cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground sage
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon brown sugar
  • 1/2 cup freshly grated parmesan cheese

Instructions

  1. Cook the rigatoni according to package instructions until al dente.
  2. In a large skillet, melt butter over medium heat. Sauté diced onion and optional red pepper flakes for about 5-7 minutes until soft. Add minced garlic and cook until fragrant.
  3. Stir in pumpkin puree and sauté for one minute. Add heavy cream, whisking until smooth. Mix in salt, black pepper, sage, nutmeg, and brown sugar; simmer gently for 2-3 minutes before adding parmesan cheese.
  4. Drain the cooked pasta and toss it into the skillet with the sauce until well coated.
