  • ½ cup melted butter
  • ½ cup unsalted butter (softened)
  • ½ cup brown sugar
  • 1 tbsp ground cinnamon
  • 24 oz cream cheese (softened)
  • 1 cup sugar
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 1 cup sour cream
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • 4 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 12 tbsp milk (optional, to thin if needed)

Instructions

  1. Preheat oven to 325°F (160°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  2. In another bowl, beat softened butter, brown sugar, and cinnamon until smooth. Spread over the crust.
  3. In a large mixing bowl, blend cream cheese and sugar until creamy. Add eggs one at a time along with vanilla extract and sour cream; mix well. Stir in brown sugar and cinnamon before pouring over the crust.
  4. Bake for about 55 minutes until set but slightly jiggly in the center. Cool gradually in the oven with the door ajar, then refrigerate for at least four hours or overnight.
  5. For frosting, beat together softened cream cheese, butter, powdered sugar, and vanilla extract; add milk if needed for consistency. Spread over chilled cheesecake before serving.
