  • 1/2 cup light brown sugar (packed)
  • 11/2 teaspoons ground cinnamon
  • 1 large apple (peeled and chopped)
  • 2 tablespoons brown sugar (for topping)
  • 1/4 teaspoon ground cinnamon (for topping)
  • 3/4 cups confectioners’ sugar (for glaze)
  • 1/4 teaspoon ground cinnamon (for glaze)
  • 2 tablespoons water (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream softened butter with granulated sugar and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Gradually mix in dry ingredients and milk alternately until just combined.
  6. Toss chopped apples with brown sugar and cinnamon; fold gently into the batter.
  7. Pour half of the batter into the prepared pan; top with half of the apple mixture. Swirl gently.
  8. Repeat layering with remaining batter and apples; sprinkle topping mixture over the top.
  9. Bake for 45 to 55 minutes until golden brown. A toothpick should come out clean.
