Ingredients

  • 3 cups bread flour
  • 1/4 tsp active dry yeast
  • 1 1/4 tsp coarse salt
  • 1 2/3 cup warm water
  • Pear
  • Pearl onions
  • Cherry tomatoes
  • Thinly sliced red onion
  • Fresh rosemary sprigs
  • Coarse salt
  • Plenty of olive oil (a few Tbs.)

Instructions

  1. In a large mixing bowl, combine the bread flour, yeast, and coarse salt. Mix well.
  2. Add warm water and stir until the dough is shaggy. Cover with plastic wrap and let rise overnight (12 hours).
  3. The next day, grease a casserole dish with olive oil and transfer the dough into it, spreading it to fit the dish.
  4. Let the dough rest for another 2 hours while preheating your oven to 400°F (200°C).
  5. Decorate the dough with rosemary, pear slices, cherry tomatoes, pearl onions, and red onion.
  6. Sprinkle lightly with coarse salt and bake for about 25 minutes until golden brown.
  7. Allow to cool slightly before slicing and serving.
