  • 2 large eggs
  • ½ cup sour cream
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 1 cup hot water
  • 4 large egg yolks
  • 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream, divided
  • 3.5 oz. dark chocolate, chopped
  • 4.5 oz. white chocolate, chopped
  • 5 oz. milk chocolate, chopped
  • ⅓ cup heavy cream

Instructions

  1. Preheat oven to 350°F (180°C). Grease two 8-inch round cake pans and line with parchment paper.
  2. In a large bowl, mix dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, milk, sour cream, oil, and vanilla until smooth. Combine wet and dry ingredients gently.
  4. Divide batter into prepared pans and bake for about 35 minutes or until a toothpick comes out clean. Cool completely before trimming tops.
  5. For the mousse: Warm cream with vanilla until steaming. Whisk egg yolks with sugar and cornstarch; gradually combine with warm cream.
  6. Cook mixture until thickened into custard consistency; divide into two bowls. Stir in melted dark and white chocolate separately.
  7. Whip remaining cream until stiff peaks form; fold into each chocolate mixture.
  8. Assemble by layering dark mousse on the first cake layer followed by white mousse; chill for 30 minutes before adding the second layer.
  9. For ganache: Heat cream and pour over chopped milk chocolate; stir until glossy.
  10. Pour ganache over assembled cake and decorate as desired.
