  • 2 large eggs
  • ½ cup sour cream
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 1 cup hot water
  • 4 large egg yolks
  • 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream, divided
  • 3.5 oz dark chocolate, chopped
  • 4.5 oz white chocolate, chopped
  • 5 oz milk chocolate, chopped
  • ⅓ cup heavy cream

Instructions

  1. Preheat oven to 350°F (180°C) and prepare two 8-inch round cake pans.
  2. Combine dry ingredients in one bowl and wet ingredients in another; mix well.
  3. Divide batter into prepared pans and bake for 35 minutes until cooked through.
  4. For the mousse, heat cream and whisk egg yolks with sugar and cornstarch; combine with melted chocolates.
  5. Assemble by layering cake with dark mousse followed by white mousse. Refrigerate until set.
  6. Prepare ganache with heated cream poured over chopped milk chocolate; cool slightly before topping the cake.
