  • ½ cup olive oil
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs (room temperature)
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup ripe bananas (mashed)
  • ½ cup dark chocolate chips
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, salt, and espresso powder.
  3. In another bowl, mix olive oil, brown sugar, granulated sugar, eggs, vanilla extract, sour cream, and mashed bananas until smooth.
  4. Fold dry ingredients into wet mixture until just combined; do not overmix.
  5. Toss chocolate chips in flour and fold them into the batter.
  6. Pour half the batter into the prepared pan; add banana slices on top; cover with remaining batter and sprinkle extra chocolate chips.
  7. Bake for about 55 minutes or until a toothpick comes out clean. Cool before slicing.
