  • ¼ cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • ½ tsp espresso powder
  • ½ cup olive oil
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs (room temp)
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup ripe bananas (mashed)
  • ½ cup dark chocolate chips
  • ½ cup semi-sweet chocolate chips
  • 1 tbsp all-purpose flour (for dusting chocolate chips)
  • ¼ banana (2 long thin slices off of a banana)
  • 1 tsp granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, salt, and espresso powder.
  3. In another bowl, mix olive oil, brown sugar, granulated sugar, eggs, vanilla extract, sour cream, and mashed bananas until smooth.
  4. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
  5. Toss chocolate chips with flour before folding them into the batter.
  6. Pour batter into the prepared pan; top with extra chocolate chips and banana slices sprinkled with sugar.
  7. Bake for about 55 minutes or until a toothpick inserted comes out clean. Let cool before slicing.
