  • 10g fresh yeast
  • 150g eggs (3 large)
  • 165g unsalted butter
  • 25cl whole milk
  • 1 vanilla pod
  • 50g sugar (for custard)
  • 20g cornstarch
  • 120g mini chocolate chips

Instructions

  1. In a stand mixer, combine flour, sugar, salt, and crumbled yeast. Mix briefly.
  2. Add beaten eggs and knead until the dough is smooth.
  3. Gradually incorporate softened butter while kneading until sticky and dense (about 20 minutes).
  4. Cover and let rise for 2 hours in a warm place.
  5. Prepare vanilla custard by heating milk with butter and vanilla pod; whisk yolks, sugar, cornstarch, and flour in another bowl.
  6. Gradually mix hot milk into egg mixture to avoid scrambling; return to heat until thickened.
  7. Roll out risen dough; spread cooled custard and sprinkle chocolate chips before folding over.
  8. Cut into rectangles, place on a baking sheet, and let rise for another 2 hours.
  9. Brush with beaten egg wash before baking at 350°F (180°C) for 10-12 minutes.
