  • 1/2 cup vanilla protein powder
  • 1/4 cup cashew butter
  • 23 tbsp milk (dairy or non-dairy)
  • 1/4 cup mini chocolate chips
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. In a medium bowl, whisk together the almond flour, protein powder, and salt.
  2. In another bowl, mix the cashew butter, milk (starting with 2 tbsp), honey or maple syrup, and vanilla extract until smooth.
  3. Combine the wet and dry ingredients until well mixed; the mixture should be slightly sticky but firm.
  4. Fold in mini chocolate chips.
  5. If needed, adjust consistency with additional milk.
  6. Roll mixture into 1-inch balls and place on a parchment-lined plate.
  7. Chill in the refrigerator for at least 30 minutes to firm up.
  8. Melt remaining chocolate chips with coconut oil in the microwave; dip each chilled ball into melted chocolate.
  9. Sprinkle extra mini chocolate chips on top while still warm, then let them set in the fridge.
