  • ⅓ cup light brown sugar (packed)
  • 2 tbsp instant espresso powder
  • ½ tsp salt
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ cup cold unsalted butter, cut into small pieces
  • ¾ cup mini semi-sweet chocolate chips
  • 1 cup cold heavy whipping cream
  • 1 tsp pure vanilla extract
  • 1 large egg (room temperature)
  • 1 tbsp heavy whipping cream (for glaze)
  • 1 cup powdered sugar (sifted)
  • 1 tsp instant espresso powder (for glaze)
  • 1 tbsp brewed coffee (or espresso, for glaze)
  • 12 tbsp milk, cream, or water (for glaze)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine flour, brown sugar, baking powder, baking soda, salt, and espresso powder.
  3. Cut in cold butter until the mixture resembles coarse crumbs. Stir in chocolate chips.
  4. In another bowl, whisk together cream and vanilla. Add to dry ingredients in two parts; mix gently until just combined.
  5. Turn dough onto a floured surface; shape into an 8-inch circle and cut into triangles.
  6. Chill for 30 minutes before baking on the prepared sheet for 20-25 minutes until golden brown.
  7. For the glaze, mix sifted powdered sugar with espresso powder, brewed coffee, and cream. Adjust consistency as needed, then drizzle over cooled scones.
