  • ½ cup bell pepper (diced)

  • 1.25 oz chili seasoning mix
  • 1 tablespoon tomato paste
  • 8 oz tomato sauce
  • 14.5 oz can diced tomatoes (undrained)
  • ½ cup chicken broth
  • 15 oz can kidney beans (drained)
  • 2 cups uncooked macaroni
  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ cup heavy cream
  • 1 cup milk
  • 1½ cups cheddar cheese (shredded)

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked.
  2. Add diced onion, bell pepper, and garlic; sauté until softened.
  3. Stir in chili seasoning mix, tomato paste, tomato sauce, diced tomatoes, chicken broth, and kidney beans. Mix well.
  4. Bring the mixture to a simmer and add uncooked macaroni directly into the pot.
  5. In a separate saucepan, melt butter and whisk in flour to create a roux; gradually add heavy cream and milk until smooth.
  6. Mix in mustard powder and cheese until melted and creamy; pour into the chili mixture once macaroni is tender.
  7. Stir everything together gently and serve hot.
