  • 1 lbs. ground beef (80% lean)
  • 1 small onion (diced)
  • ½ cup bell pepper (diced)
  • 3 cloves garlic (diced)
  • 1.25 oz. packet chili seasoning mix
  • 1 tablespoon tomato paste
  • 8 oz. tomato sauce
  • 14.5 oz. can diced tomatoes (undrained)
  • ½ cup chicken broth
  • 1 15 oz. can kidney beans, drained
  • 2 cups macaroni (uncooked)
  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ cup heavy cream
  • 1 cup milk
  • ½ teaspoon mustard powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon each: salt/pepper
  • ½ teaspoon hot sauce
  • 1 ½ cups cheddar cheese (shredded)
  • Fresh parsley (to garnish)

Instructions

  1. In a large pot, brown 1 lb ground beef over medium heat until fully cooked.
  2. Add 1 diced onion, ½ cup diced bell pepper, and 3 cloves diced garlic; sauté for about 5 minutes until tender.
  3. Stir in a chili seasoning mix, 1 tablespoon tomato paste, 8 oz tomato sauce, 14.5 oz diced tomatoes (undrained), ½ cup chicken broth, and 1 can kidney beans (drained); simmer for about 15 minutes.
  4. Cook 2 cups macaroni according to package instructions; drain and set aside.
  5. In another saucepan, melt 2 tablespoons butter, whisk in 2 tablespoons flour until smooth; gradually add ½ cup heavy cream and 1 cup milk until thickened.
  6. Mix in mustard powder, onion powder, salt, pepper, hot sauce, and stir in 1½ cups shredded cheddar cheese until melted.
  7. Combine macaroni with chili mixture and cheese sauce in one pot; stir to incorporate and serve garnished with fresh parsley.
