  • 2 tablespoons olive oil
  • 2 (15-ounce) cans chickpeas
  • Juice of 2 limes
  • 1 ripe avocado
  • 4 large tortillas
  • 1/4 cup red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 1 tablespoon chili sauce (like Sriracha or Gochujang)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: shredded lettuce, sliced tomatoes, bell peppers, pickled onions

Instructions

  1. Preheat oven to 425°F (220°C). Chop cauliflower into florets and toss with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Roast on a baking sheet for 25-30 minutes until golden brown.
