  • 2 cloves garlic, minced
  • 1 (10-ounce) package frozen spinach, thawed and squeezed dry
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1 lb penne pasta
  • Pinch of nutmeg (optional)

Instructions

  1. Cook penne pasta according to package directions until al dente; reserve 1/2 cup of pasta water.
  2. In a large skillet over medium-high heat, heat olive oil. Season chicken with salt and pepper; cook until browned, about 6–8 minutes. Remove from skillet.
  3. In the same skillet, sauté onion until softened (about 5 minutes), then add garlic and cook for another minute.
  4. Stir in thawed spinach and heat through for about 2 minutes.
  5. Pour in chicken broth and heavy cream; bring to a gentle simmer. Add Parmesan cheese and nutmeg if desired; stir until thickened.
  6. Combine cooked penne and chicken with the sauce, adjusting consistency with reserved pasta water as needed.
  7. Serve immediately topped with extra Parmesan cheese.
