  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tsp dried thyme or Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a large skillet over medium heat, add olive oil. Season chicken with salt, pepper, and thyme; cook for about 5-6 minutes on each side until golden brown.
  3. Add garlic and sauté for one minute until fragrant. Then add mushrooms; cook for about 5 minutes until soft.
  4. Stir in spinach and cook for another 2-3 minutes until wilted.
  5. Pour in heavy cream and chicken broth; simmer for about 3-4 minutes until slightly thickened.
  6. Place the chicken in the baking dish and pour the sauce over it. Top with mozzarella and Parmesan cheese.
  7. Bake for about 15-20 minutes until the cheese is melted and bubbly.
  8. Garnish with fresh parsley if desired before serving.
