Ingredients

Scale
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup light brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sweetened shredded coconut (toasted optional)

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
  3. In another bowl, whisk together flour, baking soda, salt, and half of the shredded coconut.
  4. Gradually mix the dry ingredients into the wet batter on low speed. If the dough is too dry, add a tablespoon of milk; then fold in the remaining shredded coconut by hand.
  5. Scoop dough onto a lined baking sheet with enough space between each cookie. Bake for 9-11 minutes until edges are set but centers remain soft.
  6. Allow cookies to cool slightly before transferring them to a cooling rack.
