  • 1 teaspoon coconut extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ½ teaspoon sea salt
  • 1 ½ cups sweetened coconut flakes, divided

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a stand mixer, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs and extracts; mix well.
  3. In another bowl, whisk together flour, baking soda, cream of tartar, and sea salt. Gradually combine with the wet mixture.
  4. Fold in most of the coconut flakes (reserve some for topping).
  5. Scoop dough onto prepared sheets, spacing them apart. Sprinkle reserved coconut on top.
  6. Bake for 9-10 minutes until golden brown around the edges.
