  • 1 cup pitted fresh or thawed cherries
  • 1/2 cup all-purpose flour for topping
  • 1/3 cup brown sugar for topping
  • 1/2 teaspoon ground cinnamon for topping
  • 1/4 cup cold unsalted butter, diced for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your muffin tin by greasing it or lining with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the milk, oil, egg, and vanilla extract until well mixed.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined; fold in the cherries carefully.
  5. For the topping, mix flour, brown sugar, and cinnamon in a small bowl; add diced butter and blend until crumbly.
  6. Spoon muffin batter into prepared muffin cups (about 2/3 full) and sprinkle with topping.
  7. Bake for 20–25 minutes or until a toothpick comes out clean from the center.
  8. Allow cooling for 5 minutes in the pan before transferring to a wire rack.
