Ingredients

  • 1 ¾ cups heavy cream
  • 1 cup mascarpone cheese
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups strong brewed coffee (cooled)
  • 3 tbsp almond extract
  • 7 oz ladyfinger cookies
  • 1 ½ cups cherry preserves
  • Fresh cherries for garnish
  • Unsweetened cocoa powder for dusting

Instructions

  1. In a large bowl, whip the heavy cream until soft peaks form. Add mascarpone, powdered sugar, and vanilla; continue whipping until smooth.
  2. In a shallow bowl, combine cooled coffee with almond extract.
  3. Quickly dip each ladyfinger into the coffee mixture and arrange them in a dish.
  4. Spread half of the mascarpone mixture over ladyfingers, then layer with half of the cherry preserves and fresh cherries.
  5. Repeat layers with remaining ingredients.
  6. Cover and refrigerate for at least 6 hours or overnight.
  7. Before serving, dust with cocoa powder and garnish with fresh cherries.
