  • 1/4 cup brown sugar
  • 1 tsp cinnamon

  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter (cold and cubed)
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
  2. For the crust, mix graham cracker crumbs, melted butter, sugar, and cinnamon; press into pan.
  3. In a bowl, beat cream cheese with sugar until smooth; add eggs one at a time and vanilla extract.
  4. Toss diced apples in lemon juice, brown sugar, cinnamon, and nutmeg.
  5. Spread half of the cheesecake filling over the crust, layer with apple mixture, then top with remaining cheesecake filling.
  6. For the crumble topping, mix flour and brown sugar; cut in cold butter until crumbly and sprinkle on top.
  7. Bake for about 45 minutes until set. Cool completely before cutting.
  8. Prepare caramel sauce by simmering sugar and water until amber; whisk in heavy cream and salted butter until smooth.
