  • 2 cups granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In one bowl, whisk together cocoa powder, flour, baking powder, and salt. In another bowl, beat melted butter, eggs, vanilla extract, and granulated sugar until well mixed.
  3. Combine dry ingredients into the wet mixture until just blended. Stir in chocolate chips if desired.
  4. Drop tablespoonfuls of the brownie batter onto prepared sheets, spacing them 2 inches apart. Bake for 15-20 minutes until edges are set but centers remain soft. Cool on wire racks.
  5. For the filling, cream softened butter with brown sugar and granulated sugar until fluffy. Gradually mix in flour and salt, then stir in chocolate chips.
  6. Once cookies are cool, spread cookie dough filling on one cookie's flat side and top with another to create a sandwich.
