  • 1 Tbsp vanilla extract
  • 1 cup unsweetened cocoa powder
  • 1 3/4 cups all-purpose flour
  • 1 tsp fine sea salt
  • 1 cup unsalted butter (room temperature)
  • 8 oz cream cheese (room temperature)
  • 6 cups powdered sugar
  • tiny pinch of salt
  • 1/4 cup heavy whipping cream (room temperature)
  • 2 tsp vanilla bean paste
  • 1/4 cup unsweetened cocoa powder (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 6-inch round cake pans and line them with parchment paper.
  2. In a large bowl, mix melted butter, granulated sugar, light brown sugar, eggs, and vanilla extract until smooth. Add sifted cocoa powder, flour, and salt; stir gently until combined.
  3. Divide the batter evenly between the prepared pans and bake for about 25 minutes or until a toothpick comes out mostly clean. Let cool in pans for about 10 minutes before transferring to wire racks.
  4. For the frosting, beat room-temperature butter and cream cheese together until creamy. Gradually add powdered sugar, then incorporate heavy cream, cocoa powder, vanilla bean paste, and salt until fluffy.
  5. Once brownie layers are cool, assemble by spreading frosting between layers and on top.
