Ingredients

Scale
  • ½ cup unsalted butter
  • 1 tablespoon espresso powder

  • ¼ cup granulated sugar
  • 1 large egg
  • ½ tablespoon vanilla extract
  • ¼ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cups all-purpose flour
  • ½ cup Heath toffee bits with chocolate
  • Flaked sea salt for topping

Instructions

  1. In a medium saucepan, melt the butter over medium heat until golden brown and nutty in aroma. Remove from heat and stir in espresso powder. Chill for 1-2 hours.
  2. Beat cooled browned butter with both sugars until fluffy, about 3-4 minutes.
  3. Mix in the egg and vanilla until combined.
  4. Gradually add baking powder, baking soda, salt, and flour; mix on low speed until just combined.
  5. Fold in toffee bits gently.
  6. Scoop large dough balls onto a plate; refrigerate for at least a few hours or up to 24 hours.
  7. Preheat the oven to 350°F (175°C). Place dough balls on parchment-lined baking sheets, sprinkle with flaked sea salt, and bake for 11-13 minutes until golden around the edges.
  8. Let cool slightly before transferring to a wire rack.
