  • 1 lb cheese tortellini (fresh or frozen)
  • 2 cups bell peppers, diced
  • 1 cup red onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your Blackstone grill to medium-high heat for about 5 minutes.
  2. Boil salted water in a pot and cook the tortellini according to package instructions (about 3-5 minutes). Drain and set aside.
  3. In a bowl, mix bell peppers, red onion, garlic, olive oil, Italian seasoning, smoked paprika, salt, and pepper until well combined.
  4. Grill the sliced chicken or turkey sausage on the preheated grill for about 3-4 minutes until browned.
  5. Push the sausage to one side of the grill; add the seasoned vegetables to the other side and grill for another 5-7 minutes until tender.
  6. Add the drained tortellini to the grill; toss everything together for an additional 2-3 minutes until heated through.
