  • ½ cup Thai sweet chili sauce
  • 1 teaspoon Sriracha (to taste)
  • 2 tablespoons honey
  • 1 ½ pounds boneless skinless chicken tenderloins
  • 1 cup buttermilk
  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 1 large egg
  • Panko breadcrumbs
  • Canola oil (for frying)

Instructions

  1. Prepare the sauce by mixing mayonnaise, Thai sweet chili sauce, Sriracha, and honey until smooth.
  2. Marinate chicken in buttermilk for at least 10 minutes to keep it juicy.
  3. In a separate bowl, whisk together flour, cornstarch, egg, Sriracha, garlic powder, salt, black pepper, and optional cayenne.
  4. Coat each marinated chicken tenderloin in the mixture and then in panko breadcrumbs.
