  • 1 large egg (or substitute with 1/4 cup unsweetened applesauce)
  • 1 teaspoon vanilla extract
  • 2/3 cup mashed ripe banana (about 2 medium-sized)
  • 1/2 cup sour cream (or Greek yogurt)
  • 2 cups all-purpose flour (or gluten-free flour blend)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 1 teaspoon cinnamon
  • 3/4 cup graham cracker crumbs
  • 2/3 cup whole milk (or plant-based milk)
  • 1 cup miniature chocolate chips, divided
  • 1 cup miniature vegan marshmallows bits, divided

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a muffin pan with liners.
  2. In a large bowl, mix melted butter and brown sugar until combined. Add egg (or substitute), vanilla extract, mashed bananas, and sour cream; mix until smooth.
  3. In another bowl, combine flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs.
  4. Gradually add the dry ingredients to the wet mixture along with milk; stir gently until just combined.
  5. Fold in 3/4 cup chocolate chips and vegan marshmallows.
  6. Fill muffin liners evenly and top with remaining chocolate chips and marshmallows.
  7. Bake for about 16 minutes or until golden brown. Cool before serving.
