  • 2 large chicken breasts
  • 4 ounces cream cheese
  • 3/4 cup heavy cream
  • 4 cloves garlic (minced)
  • 8 ounces sun-dried tomatoes (chopped)
  • 3/4 cup fresh spinach (chopped)
  • 1/4 cup Parmesan cheese (grated)
  • 3/4 cup mozzarella cheese (grated)

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. Slice chicken breasts in half lengthwise and arrange in a baking dish. Season with salt, pepper, and half of the minced garlic.
  3. In a bowl, mix cream cheese and heavy cream until smooth. Add remaining garlic, seasonings, Parmesan, and half of the mozzarella; combine well.
  4. Spread sauce over chicken; top with sun-dried tomatoes and drizzle with oil from the tomatoes.
  5. Cover with foil and bake for 20 minutes until chicken reaches an internal temperature of 165°F (74°C).
  6. Uncover, stir in spinach, and sprinkle remaining mozzarella on top.
  7. Bake uncovered for another 10 minutes until cheese melts. Let rest briefly before serving.
