  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup milk (room temperature)
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. In a medium bowl, combine flour, brown sugar, granulated sugar, and cinnamon for the crumble topping. Pour in melted butter and mix until clumpy.
  3. In another bowl, whisk together flour, baking powder, salt, and cinnamon for the muffin batter.
  4. In a large bowl, beat brown sugar, granulated sugar, and room-temperature butter until fluffy. Add eggs, sour cream, and vanilla extract until well combined.
  5. Gradually add the dry mixture to the wet ingredients alternating with milk; fold in diced apples gently.
