  • 340 g all-purpose flour
  • 225 g granulated sugar
  • 125 g butter (room temperature)
  • 200 g dark brown sugar
  • 3 eggs (room temperature)
  • 225 g sour cream (14-18%, room temperature)
  • Ground cinnamon
  • ½ tsp ground cinnamon
  • 2 1/4 tsp baking powder
  • ½ tsp salt
  • 40 g vegetable oil (e.g., canola oil)
  • 1 1/2 tsp vanilla extract
  • 125 g powdered sugar
  • 1 tbsp maple syrup
  • 1 tsp sour cream
  • 1/2 tsp vanilla extract
  • 12 tsp water

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, toss diced apples with granulated sugar and cinnamon; set aside.
  3. For the crumb topping, mix flour, dark brown sugar, and cinnamon in a bowl. Add room-temperature butter and combine until crumbly.
  4. In another bowl, whisk together flour, baking powder, salt, and cinnamon. In a separate bowl, cream butter and granulated sugar until fluffy. Add eggs one by one, then mix in sour cream, vegetable oil, and vanilla extract.
  5. Gradually fold dry ingredients into the wet mixture without overmixing. Fold in the prepared apples.
  6. Pour batter into the greased pan and sprinkle crumb topping on top.
  7. Bake for about 70 minutes or until a toothpick comes out clean.
  8. While cooling, prepare the maple glaze by mixing powdered sugar, maple syrup, sour cream, vanilla extract, and water to desired consistency; drizzle over cooled cake.
