  • 1/4 cup apple butter
  • 2 tablespoons granulated sugar
  • 2 tablespoons water

  • 1/8 teaspoon fine sea salt
  • 2 teaspoons water
  • 1 teaspoon cornstarch
  • 3/4 cup water
  • 1/4 cup bread flour
  • 3 2/3 cups bread flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream (room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • Tangzhong (from recipe above)
  • 6 tablespoons unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 2 teaspoons ground cinnamon
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream
  • 2 tablespoons apple butter

Instructions

  1. Prepare the filling by mixing diced apples with apple butter, sugar, water, lemon juice, cinnamon, vanilla extract, sea salt, and cornstarch in a bowl.
  2. Make tangzhong by combining water and bread flour in a small saucepan over low heat until thickened; let cool.
  3. In a large bowl, mix remaining flour, sugar, yeast, and salt. Add milk, heavy cream, egg, vanilla extract, tangzhong mixture, and butter; mix until smooth.
  4. Knead dough on a floured surface for about 10 minutes until elastic. Place in a greased bowl to rise until doubled in size.
  5. Roll out dough into a rectangle and spread the apple filling evenly before rolling tightly into a log.
  6. Cut into rolls and place in a greased baking dish to rise again.
  7. Bake at 350°F (175°C) for about 30 minutes until golden brown.
  8. While cooling slightly on a wire rack, prepare frosting by mixing softened butter and cream cheese until smooth; add powdered sugar and heavy cream gradually.
